I really don't remember the second week being so tough as it has been this trip. I'm not lounging for bread in mass amounts, but I really wouldn't mind toast with some PB. Or pizza. Or even A breadstick. But I can't yet. I need to wait it out just a little longer.
I did pick up some almond meal tonight. I found a recipe where I can make chicken nuggets with the almond meal instead. It sounded good, so we'll try it this weekend. I also picked up some Quinoa to try. The articles I've read say it's great for you and better than rice. Shockingly I found this at our normal grocer so I thought we could try it. Change is good and it doesn't look too hard to make. I've been finding a lot of recipes calling for it too. So there we go.
I also found a recipe to make your own tortillas. I'm excited about that. I have some experimenting to do this weekend, I think. :)
